Skip BLTs for this BST

During the weekend, I made my first trip of the year to the farmers market and was happy to find some beautiful bright red homegrown tomatoes, which I quickly sliced up for a sandwich. Using ingredients I just happened to have on hand, I created this new (and very simple sandwich) that I’ve dubbed a BST in honor of the sandwich’s basil, Swiss and tomato contents.

Lori’s BST sandwich
Fresh roll
Smear of basil pesto
Smear of low-fat mayo
Slice of Swiss cheese (the good kind from the deli)
Slice of tomato
Sprinkle of salt

Layer accordingly and serve with a pickle spear and additional tomato slice for good measure.
