WICHITA — There’s a new Mexican restaurant opening in the former Quiznos space at Murdock and Waco.
Husband and wife Javier Chavez and Claudia Orozco are opening Pimiento around the first of July.
The restaurant is named for a pepper that’s similar to a bell pepper, Orozco says.
Chavez used to own Chavez Restaurant near Central and McLean in 2001.
The new restaurant will particularly feature homemade corn — not the more customary flour — tortillas.
“That’s what we specialize (in) for tacos,” Orozco says.
She says the restaurant will be a cross between fast food carryout and more traditional seating for about 40 people.
The restaurant also will serve beer.
Orozco can describe the menu in one word:
“Authentic.”
