WICHITA — West Wichita, get ready for a Wild Thyme.
Jody Briceland is opening the bakery and cafe next month near the southwest corner of 53rd and Maize by Pizza Hut.
Briceland says she’s always wanted to “have an outlet to use all the passion I have for food and entertaining (and) customer service.
“I love people. I love to be in the mix of things.”
For the last year, she’s been in training of sorts while working for Green Acres Market & Deli.
“I just wanted to do a trial run, and they allowed me to do that,” Briceland says. “They’ve been very supportive of me.”
Briceland also formerly managed the Rolling Hills Country Club, ran her own catering business and worked in real estate.
She’s been working at Green Acres for the retail experience.
“I wanted to get a feel for it. It just clicked.”
Like Green Acres, Wild Thyme will offer a lot of gluten-free and sugar-free products. There will be an emphasis on raw, vegan and vegetarian dishes, but Briceland also will have more traditional sandwiches as well.
“It’s going to be a combination of things, and it’s something we don’t have out west,” she says.
Initially, she’ll be open 7:30 a.m. to 6 p.m. Monday through Saturday. Soon, though, Briceland would like to expand her hours for dinner as well.
Her 1,200-square-foot shop will have seating for about 25. Briceland also will have casseroles and salads available for take out along with daily specials.
She’d also like to help people prepare menus based on dietary or other needs.
“We want it to be real eclectic.”
