Pimiento is a tiny little Mexican place that just opened in the former Quiznos spot at738 N. Waco.
Owners Javier Chavez and Claudia Orozco (who interestingly own a few restaurants in their native Mexico, too) are serving a tiny menu to match.
Hours are 9 a.m. to 7 p.m. Mondays through Thursdays, 9 a.m. to 8 p.m. Fridays and Saturdays and noon to 6 p.m. Sundays.
